Probably something to do with the wing design, angle of attack, use of flaps/ailerons. Stuff like that I suspect.

AFAIK the aerofoil of your average plane wing is designed to produce optimum lift right way up, so you can't simply turn it upside down and expect it to fly. However, there are control surfaces which disrupt or enhance lift.

Stunt planes have - and I'm sure someone will correct me - aerofoil surfaces which are closer to symmetrical.

One theory about the origin of the expression 'going pear shaped' was pilots trying to fly a loop but having the top flatten.

Now you tell us why most helicopters can't do a barrel roll :)

Partly why Douglas Bader crashed back in the day and lost his legs .....did a slow barrel roll but started it too low while showing off and didnt account for the loss of lift when the wing was crossing over the upside down part of the roll. Ended up in a tangle of wreckage

And showing why 'rules are for the
obeyance of fools, and the guidance of wise men' isn't always good advice. They had a rule about the minimum height for certain manoeuvres.

As an aside, a mate (LabRat on Visordown) apprenticed as a saddler. He occasionally repaired DB's 'spare legs' bags. Said he was a miserable ... chap.

Boeing famously did a barrel roll in an 'airliner', the plane which preceded the 707 as a tech demonstrator. So it can be done. Might want to stow your tray table first though.

There's a video somewhere of a pilot in a light jet (Lear or similar), flying a nice smooth barrel roll, while pouring water from a jug into a glass. He managed to do it while you can see the horizon rotating through the cockpit glass.
