Partly why Douglas Bader crashed back in the day and lost his legs .....did a slow barrel roll but started it too low while showing off and didnt account for the loss of lift when the wing was crossing over the upside down part of the roll. AFAIK the aerofoil of your average plane wing is designed to produce optimum lift right way up, so you can't simply turn it upside down and expect it to fly. However, there are control surfaces which disrupt or enhance lift.
Stunt planes have - and I'm sure someone will correct me - aerofoil surfaces which are closer to symmetrical.

There's a video somewhere of a pilot in a light jet (Lear or similar), flying a nice smooth barrel roll, while pouring water from a jug into a glass.
