I reckon you could do a pretty good matar paneer with tofu for the squeaky cheese in the cheesy peas.

Tofu is never an acceptable alternative for cheese, nor meat for that matter.

Oh, I dunno, if the question that needs to be answered is 'What's a good source of protein/amino acids for a vegetarian?' Then tofu might well be an acceptable answer.
