I'm presuming you're aware of the N260, it's an awesome road - all of it - but there are options. Whatever you do, make sure you include N260 sections from Sort - Adrall and Queixans - Ribes de Freser for peak awesomeness. And if you've got 11 days, I'd try and work in a lap of the Picos de Europa ...
