Personally I'd have a few things like a Renault 5 Turbo or an Escort 1.3 Popular to remind me of my grandad.

I’d buy back my old Evo, best car I ever had, an absolute weapon on the road, perfect set up and power.
Something newer and up to date it would have to be G81 M3 Touring, I think that would be the ideal family car ticking all the boxes.

Thought about this and finally decided that cars don't do anything for me much any more. Don't lust after mega power - don't have the skills to use it....or the roads. Don't relish silly insurance and service costs. Don't care if people notice what I'm driving etc etc.
So, if it's a dream I'll just have one that doesn't exist - a pre-all-the-safety-gizmos 'S' Class Estate...in black. Electric with a 400 mile range will do. A Bentley, similar spec would suffice, maybe.

I’d have another Forester Turbo SG9 like a shot . I had 6 of them from ‘99 to ‘21, put about 70k v enjoyable miles on each.

Otherwise? Quite happy with our (second) Up GTi thanks. I don’t aspire now to glorious stuff which we couldn’t use day to day, or without worrying about it.
