Don't have a problem on this device either (v new Samsung tablet, so recent Android release). Whatever Assistant is doing, it's doing it v discreetly. CJ Don't think this is the answer ! Assistant is not a discrete App . I's an " integral " part of the android o/s nowadays . ( It didn't use to be ! )

I have just (this week) got a new Android phone. No issues with Google Assistant and a Samsung A53.

I have the opposite problem (well kinda).
I've used google assist several times on this phone with fairly good success. The last few times I've said "Hey Google" it hasn't responded !
I've just checked the settings and it appears to be telling me that "this feature is not supported on your device at this time". Which would mean that one of the software updates I've had has REMOVED a function from my phone !!

Just checked on my Samsung A22 phone.
In "Apps" it was showing as Assistant. Was able to disable it then uninstall. Easy
