Mobile Phones......Google " Assistant "
I've had Apple phones in the past and don't like them , so I'm stuck with android and Google . The one thing that really bugs me is the bl**dy Google Assistant . I find it totally intrusive and don't want it at all . So I turn it off and it keeps bombarding me with messages " Do I want to turn it on ? " . Often these intrusions bugger up whatever else I am trying to do at the time . Am I missing a trick ? ( Very likely I am ! ) .
What else can I do to avoid/evade Google " Assistant " please ?

Do you have a Google Assistant shortcut button - this can sometimes be a long press / double press on camera button or a volume button?

mine pops up about once a year... tops... other than that... i never ever see it.

What's causing it to spring to life? Mine very rarely does.
On my old phone (pixel 2 I think??) squeezing the lower 3rd together openned it.
If it's voice command that's opening it, you could try setting up the voice command again so that it only opens when you say 'ok Google'

I had to look in Settings to remind myself what it is. I think I turned it off on this and the missus' phone when we got them and forgot about it. A delve in Settings, Google apps, notifications may help.
Doubt is not a pleasant condition.

It installed itself on my Sony headphones. Taking over the noise cancelling button.
Had to download the Sony app to get my own control of the headphones and delete Google.

Screenshot shows make of phone and android version . As far as I know , I have no shortcut buttons . Honestly , a couple of times a day , Assistant ask me if it can turn itself on . Needless to say with a touch screen , sooner or later you accidently say yes .

Try:
Settings (the gear icon in the drag down from the top of the screen)
Google (Google settings)
Settings for Google apps
Search, Assistant and Voice
Notifications (it will probably say:
'Notifications
On'
Tap that
Assistant
Show Notifications.....flip the slider to Off
That might shut it up.

I've got a Redmi with MIUI on it (although I'm on 12.5.5) and have never had the problem. I have to hold down the circle icon at the bottom to get Google Assistant to fire up.

Can't tell from what you posted, but what make of phone is it? It may depend on the particular implementation of the manufacturer from what I can see on the Web. In Apps turn all its permissions off,so it cant notify you, nor can it access anything on your phone. That should make it deaf, dumb and blind.

CJ Don't think this is the answer ! Assistant is not a discrete App . I's an " integral " part of the android o/s nowadays . ( It didn't use to be ! )
