Hand cranking pasta is so last year!
Tough ol' Nonna uses a huge rolling pin, and laughs in the face of pasta machines.
I have a photo of the Gremlinette from many years ago when we were in Puglia. There was a woman with a basketball-sized of pasta dough on a kitchen table sat outside in the evening cool. She was deftly rolling a 'tail' from the ball, then using a spoon to flick off perfectly formed oreccihette into a bowl next to her foot. She invited the kid to sit next to her and give it a go, and in fairness, she made a few good 'uns. Quite pleased with herself, she was.
I asked Nonna if it the dough had egg in it. Big mistake, as she held up three fingers and indignantly listed, 'FARINA! SALE! ACQUA!'.
That'll be a no to egg then...
