For me i'll be a bit of a heathen and throw in a compilation of 1 by the Beatles. Mostly because of the memories it brings and the happy sing-along tunes

I much prefer The Colour & The Shape and Echoes, Silence, Patience & Grace. I've seen 'em live a few times, but I've not bothered listening to the last few albums much.
Regarding the OP though, this is the first one which springs to mind but it's impossible to say which is my fave really. Same for everyone.

I'll chuck a couple of Laurie Anderson albums on the pile, definitely 'Strange Angels' and probably (a bit more funky 'cos Nile Rogers was involved) 'Home of the Brave'. Oh and 'Closing Time' by Tom Waits. 'Care' by Shriekback too.

Recently I have been listening to The Commoners a lot, Find a Better Way is the album.
For a bunch of Canadians they play some excellent southern rock
But there are two albums that I keep going back to on a fairly regular basis

Green River by CCR would be up there,seems like it's been the ever-present soundtrack of my life.

One Album is difficult, most played whole album is Green Day American Idiot. If I could have an album of one artist I’d pick Chris Cornell and have no problem filling it with tracks from several of his bands or solo stuff. Second complete album could be Arctic Monkeys, whatever people say I am,that’s what I’m not. I listen to loads of different music so one album would never work

The best Greenday album is Dookie... followed by Insomniac.
Which on a semi-related note has reminded me what a cracking album Offsprings 'Smash' is.
Just like motorcycles, music from the 1990's is the best.
