We took the ferry from Split to Ancona a few years ago. Big mistake as the ride up from Ancona to Bergamo was awful. Mile after mile of industrial estates lined the route, with constant 40 or 50 kph limits on the roads.

I would avoid the Italian side of the Adriatic. There is nothing worth seeing along the road heading up towards Madrid.
Also avoid the SS49 that goes from the Austrian border in the west to the Slovenian border in the east. Unfortunately getting the Motorail to Innsbruck and meeting friends in Kamnik,Slovenia meant that for two years we had no option. Awful road.
But loved the roads through and over the Dolomites to Cortina. Stunning.
Never dine more than those three areas, so must go and see more
