I could kind off agree with the Busa and the Fatboy.
So...
Three bikes you'd like to own/ride (or already have) before riding isn't an option.
In no particular order...
Gen 1 Hayabusa
Panigale (what ever the biggest/fastest one available at the time is)
HD XR1200

I think the future is behind me now. There's no new bike I can think of that I lust after. Looks like it may be older shit for me.
I've been fortunate enough to own or at least ride most of the best bikes from 70s on. One run on a HedgeAbuser was plenty to tell me the GSXR1000 was a more enjoyable bike for me and that's from someone who loved his ZZR1100. I'd rate my 04 ZX10R C1 as possibly the best bike I've ever owned.
Anyway,top three yet to own would be...
1. Kawasaki 1972 H2
2. Kawasaki 1969 H1 in white please.
3. Rickman framed CR900 Z1

Speed Triple 1050. Owned one, absolutely loved it, sold for a 675Daytona and regretted it immediately.

Triumph T100 - I bought one of the 790 cc 'original' ones and rode it 30k miles
Triumph Tiger 955. Rode one and loved it, alas my legs are too short
