Lardy cakes seem to come in several versions.

The ones from my West Country (Devon) youth I remember as a fruit cake, a heavy greasy one, that had a sunken crown. Sounds horrible I know, but was actually delicious. My Uncle Jack was a baker and used to make them. The last time I saw one for sale was about 40 years ago in Bideford.

More recently I have had a version in the Cotswolds that was much lighter, flatter, and less heavy. Still greasy, and pretty good, just different.

No recipe for either version I'm afraid. Google will know.

As is usual whenever I bake something, I forgot an ingredient (even when I have the fucking recipe RIGHT THERE on the counter). Today it was salt & pepper. Bugger...

BUT!! I decided to augment the usual recipe by adding 1/2 tsp of sriracha seasoning while all the gubbins was in the mixer. That gave it just a smidge of spicy. It could use just a bit more... That's gonna be added to future batches.

The grease is err.....lard. :D a sugar+fat paste in/on a cake prior to baking is a classic move. My Danish rellies also taught me how to make Brunsviger, which has a similar vibe.

It's like how almost every culture has some variation of fried dough.

I've lived in MK nearly 15 years now and I think I only know two people who are actually from MK. One of whom is my daughter :lol:

My particular little grid square of MK also gets a mention in said book, despite the fact we're literally the next grid square over from MK Village (now called Middleton). The world was a bigger place back then :lol:

I lived in Bradell village 1996. Opposite the Victoria pub and 2 doors from the Albert pub.

Loved to watch the cricket on the green. But the locals were horrible.

Then 2 years in Shenley Church End.

Then bought my pension winning house in Great Holm in 1998
