I'm not sure why, but I expected the cutting tools to be lubricated, I guess heat isn't a problem in that process.

Probably using carbide tools and compressed air to cool. The tools will get changed reasonably often for precision work. Coolant usually also acts as lubrication but may not be needed on softer stuff (or, oddly, cast iron as the graphite in the metal does the job).
It's a while ago now but my final year project was on the heat treatment of sintered tool steels.
Did a bit with early efforts at making ceramic tool tips (Hot pressed silicon nitride) too.
