I reckon that one of those will do the job you want it for. You'll be surprised at just how eager to rev that 690 motor is. It's a world away from old Brit single cylinder bikes. I forgot that my pal with the V twin Panigale bought a big Ducati Hypermotard. He told me he's selling it, so offered me a demo ride.
Gave him a pack of beer and the bike was mine for the evening. On way to petrol station it was shite and felt like the front tyre was flat.
Called at my gaff and both tyres were way down. Pumped them up and set off to destroy the full tank of fuel. Headed off into the hills for the fun bendy bits. After about 15 minutes, I turned back as I was hating it.
Power was only steady. When it seemed to be getting going, it ran out of puff.
Low down grunt was disappointing, but maybe I've been spoilt by the GSXR1000
Brakes were OK
Gearbox was agricultural.
Steering at low speed was dreadful. I thought the S.U.A.B. riding position and high bars would be a hoot. Had both feet down at junctions.
Suspension was very comfortable
Above 80 was shit. Too windy.
I was honest with my pal and he said when he was riding it back from Tenerife, he felt the same thing and wondered if he'd made a big mistake. It grew on him and now loves it, but I'm not willing to take that gamble

TBH mate, I think you've had too many GSXRs and not enough experience of other bikes. Motards in any guise are pretty focused, or task specific, bikes. Comparing them in any way to a 1000cc faired superbike is about as far apart as an apple and orange can be!

One thing I found annoying.
I couldn't tell what gear I was in.
On the GSXR and the Husky and GasGas I can tell instinctively by the exhaust note.
The Ducati is flat note and I got lost
Dropped down too many gears sometimes

This is why you're not going to get on with them
You want the speed, thrill and excitement. But you also don't.
Nothing will brake like a 1000 jap bike on massive calipers and discs. Nothing will pull like one either, or cruise like one.
You have to accept it's like the difference between beer and cider. The only thing is they have an engine and wheels. Apart from that they're different. It's a different brain, mindset, attitude. Just totally different way of riding and experiencing it.

That was my first thoughts from your comments, you won't like a 690. Compared to the GSXS the 690 has no power/pull, let alone a GSXR. The 690 comparison is to things like MT07s etc performance wise. In terms of speed whilst they will do 120mph realistically it's all about sub 80mph and at 80 mph it's like riding a block of flats into a headwind. But like Weeksy I love them, but I think it's a mindset. My riding on it was all small nadgery B-roads where 80 mph is a max on most bikes. On ride outs with mates on those roads the 690 was fine but on fast flowing A roads it wasn't in its happy place. As an example when riding to work etc on the A414 I'd speed up for the roundabouts and then shut off and sit there at 70mph cos there wasn't a point ragging it to do 85-90 and being uncomfy with the engine at higher revs. The brakes on the standard 690 aren't great either, not sure on the SMC/GasGas. They were radial Brembo but they needed a proper tug, the GSXS brakes in comparison are a brick wall.
Still try one if you can though but it doesn't sounds like from your comments you'll like it.

If you want something in-between the GasGas and the GSXR for nipping to the shops & a quick spin etc. then a 690/700/701 probably is that bike but you'd never like one if you're comparing it to the other two.
If I was in your position I'd buy one anyway and give it a chance for a while. You'll either grow to love it or lose not that much money when you sell it

I do want a bike to just potter about on. The speed limits here are pretty low and frustrating sometimes on the GSXR1000.

The brakes on a supermoto should be better than those on a superbike, my Husky had the best front brake of any bike I've ridden, it was half a 916 setup, with less weight and a lot less power, also helped by very good forks and a very sticky front tyre (shame the engine self destructed)
Riding a supermoto should be like riding an MX bike on tarmac tyres, if it isn't, then it's not a supermoto.
I used to use my Husky for trail riding in the dry, because it was just a trail bike with stiff suspension, small wheels and very good brakes, you could use your Gas Gas off road with 17" wheels, the rear makes no difference, and you just need to learn to avoid big holes with the front (or wheelie over them)
