I can't imagine GM creating a system that is better in any way whatsoever than Google and Apple can produce.
All the car makers knew the limitations of touch screens but still pushed them on people, whatever replaces them is likely to be equally rubbish bling.

The smarter OEMs are working with tech providers to develop their infotainment systems. Why reinvent the wheel?
On that note, whatever happened to Apple's car?

The issue of operating systems being good/bad/safe/dangerous is secondary to the issue that you should really have the common sense to put the operation of your vehicle above that of listening to your favourite playlist.
Common sense? It isn't.

They dropped it about a year ago and chose to work with existing manufacturers iirc (ie on providing the infotainments)

Our first Ovlov (2020MY) had voice activation as well as a TV screen - voice control wasn't very good. 2nd Ovlov (2022MY with Google's AAOS) is really good - even though I feel a bigger nob than usual, I find I mostly use voice control when driving it.

If you're on your own who cares if you look a knob.
If you're with family they already know you're a knob.
If you're with anyone else, they should be programming the sat nav for you anyway!

One thing worth noting is that people shouldn't necessarily conflate CarPlay/AA with touchscreen-only use. They do work on touchscreens, but also with knobs and buttons. The manufacturers can still provide the hardware if they can be bothered.

You mean if they decide they want to pay for it.....

The physical buttons on the wheel in my car work with AA...it's the worst of both worlds though, cause most of what you can do with them is just navigating a little selector box on the big screen

Exactly. Though in the days before everything went touchscreen, most of the CarPlay integrations relied on the physical controls.
My job is in UX generally (usually websites/digital apps) and I can't stand the reliance on touchscreens in cars. Objectively and provably inefficient and potentially dangerous. I could never buy a Tesla for this (and several other!) reasons

Agreed, it's basic. I had it on my last car with no touchscreen and liked it though. The interface tends to be very basic anyway, so it's not like you're trying to navigate a webpage or anything.

I fell out with Apple Car Play at the weekend - well, it's probably more to do with the T6 I was driving, but it would play music/show maps from my hone for quite a while - then it would disconnect

To reconnect you have to either press on the touch screen twice (different places) so I have to lean over to reach it. Or unplug the phone and replug it then reactivate the maps bit cos that has stopped with ACP sticking it's fingers up
The, today I was in a Caravelle Luxury model (woohoo!) didn't bother to connect the phone as was an 'in resort' trip (well three!). But, I then realised that the reason I have to lean across to reach the hazard light button and/or the parking sensor button is cos the screen (that dislikes my phone in the other vehicle) is so freaking huge that the buttons the driver might actually want are basically in the lap of the passenger
I do need to get a screen holder to fix the phone so I don't have to connect it to the bloody apple system and use the gurt big screen, but then I also have to find a way to connect the phone to the vehicle without it being fully connected! I just want music and phone calls to go through the car system - I'm very happy (with a screen mount) to use google maps on my phone!!

And I'd really prefer some of the important buttons to be closer to the driver!!

I have Android Auto and Apple CarPlay on my NT1100, you are automatically locked out of making any changes via the TFT when the bike is travelling above ~5kmh

What about when the touchscreen cycles through various screens that access vehicle functions?

The one in my car has a "zeroth" layer which has all the functions you'd actually want for driving. That should be the default/law imo.
In fact it goes further than that, the only driving type function on the screen is the heater/demist controls and they're permanently in the same place and unchangeable. Everything else is on the steering wheel/stalks.
If you're cycling through menus (in this particular vehicle) it's to do something like change the routing criteria or adjust the colour of the interior lighting, which you should not be doing when trying to drive screen or no screen.
The common infotainment operations (choice of music, destination input etc) are on the zeroth layer.

Again, this is where somebody operating a vehicle is meant to exercise good judgement. Seat belts are up there in terms of safety, but adjusting them for height whilst driving is a bloody silly thing to do. Ditto seat adjustments. All this should be done whilst the vehicle is stationary. Same with any infotainment systems. If it can't be done safely, wait 'til it's safe to do so.
