I bought one from Zanx years ago, was meant to be for the kids to play with but was way too big for that. It was certainly entertaining when the brake wasn't set right, I dropped the handles in a gust and got dragged across a field by the wrist straps until the canopy got stuck in a tree. Much fun but I rarely find a big enough empty space to use it.

I’ve got one of them too, I had to get a set of killers for it as I got dragged across a hilltop playing field and I’m a lardarse.
Cool as though. Might dig it out and have a go one day.

Slow cooking would be my bet, some kind of weird Franco/Spanish cassoulet type thing.

Reckon being off the bone it's too squidgy to be possible to slice thin enough to be edible with a knife, you'd need a

All I would have done is chop it into a very small dice (<5mm?), portion into lots of bags and bung in the freezer. Then saute with the veg when making rice dishes or soups, should work great with 'brown/green lentil & veg soup', 'saute' potatoes' etc

It went in the bin. It shredded like pulled pork and looked nice but was useless to eat.

I dont have the knife skills or a slicer to get it thin enough to give it a chance really, but even if I had I doubt it would be that nice. I've had it in Spain where it's very thinly sliced, but even the hallowed Extremadura acorn fed pig stuff isn't really my taste. One or two slices is more than enough...

I suspect a large part of it is that you can't slice it thinly enough with a knife, you need a bacon slicer. Serrano, Prosciutto/Parma etc. (i.e. 'raw' hams) are all like that.
However that said, there are plenty of recipes that use bigger pieces - and more often the rind - cooked for a long long time.
