cycle stem degree and length question

Right, my bike come with a 80mm stem, months ago I upgraded to a 90mm stem, not a massive change but improved feel and all that, still feel I can make changes and increase it slightly, currently my bike has a V15 with angle of +/- 6 degrees and the steerer is 1 1/8"
a new one posted from canyon is £60, and don't want spend that and hate it, so looking round and can see other for half the price, but ive found some have a +/- 7 degree angle, now my question is.... would that 1 degree make a difference or be fine. some make a massive jump to +/- 17 and I guess that's extreme.

I wouldn't have thought 1deg was going to be noticed in honesty.

I've dropped bikes by 20-30mm in length at times and you can certainly notice in terms of handling and reach... but i can't see 1deg moving it more than a couple of mm, maybe even 1mm

I don't think you'd notice the difference

You won't notice. I replaced a Ritchey +-6deg 120mm stem with a Deda +-7deg 90mm stem and the bar height remained identical it was just the difference in reach that was obvious - exactly what I wanted.
