Was it because there was a 1000cc bike available at the same time which was basically a bored and stroked version of the 750 so it was just a crank swap with an off the shelf part

Nope, in the 80s and 90s (and maybe still now) production based bikes were allowed to run oversize pistons up to 1mm bigger to allow for rebores, all the works bikes instantly "needed" reboring. Peter Day had an ex Belgarda WSB OW01 that was about 820cc

Who is only racer to get get a podium in all 4 of the current MotoGP classes? (Or their previous guises 125 and 250)

Was the Guzzi V8 a GP bike? Can't remember what class it was in, but know it was a TT bike, just can't remember if the TT was part of the GP championship at the time.
