After a bit of toing and froing she accepted that I'd already had the vaccine. She also told me the manager wasn't in this week so the records haven't been updated.

There is every chance that it was a volunteer or someone very junior calling you. Have you tried to help yourself by downloading the NHS App? You can see your vaccine recorded in the ‘immunisation’ section- perhaps you could have calmly replayed that back?
As for 3k a year- how much for private insurance or, more specifically what is the cost of providing acute care? Or chronic care?
If you weren’t such a toxic, bitter lonely old man-perhaps you could have volunteered to help out? I was working in two vaccination clinics recently and everyone from the marshalls to the people phoning around were volunteers- from architects and actuaries to bin men and housewives.
These are phenomenally unprecedented times. How fantastically magnanimous of you to behave in such a way. My hero.
