I completely agree, running a cafe can be a real headache with all the regulations and health inspections. It’s a lot of work and the margins are often pretty slim. It's tricky finding a balance between a good idea and the financial viability, especially with overhead costs spiraling.

I know a lad that does this, he was selling them on one of the markets we work. He supplies some local restaurants too. He recently got into supplying a couple of nice farm shops which are taking such a large amount he doesn’t have the stock to do the markets now.
I believe he has them growing in a couple of shipping containers, not sure of the set up but must be fairly simple to sort.
