I think there's a little more to it, if all of the touchscreen options were transferred to physical switches drivers would still find it confusing. I only remember switches I use regularly so I only want switches I use to be physical.
My ten year old Jag has a fairly good balance and I rarely need to use the touchscreen, only for HVAC as I don't like black box buttons that offer vague things like 'max screen clear'. The bit I really hate in there are the multiple multi-way switches on each seat, I rarely know what will happen apart from not getting comfortable.

Many years ago, there was research which confirmed (until then it was only a guess) that most drunk pedestrians who were involved in road crashes were within walking distance of a pub.

I disagree, all of my buttons are physical, which are better (IMHO) for 2 reasons, I don't have to look to activate them, and I don't have to look to know I've activated them.

Ok so I've had this car for 5 years now and know where every button, knob and dial is, but it doesn't take long to get to know.

Drivers overwhelmingly prefer cars with physical buttons and switches over distracting touchscreen controls, a study has found. Almost 90 per cent of motorists said they would rather drive a car with buttons and cited safety and not having to take their eyes off the road as the primary reason.

The latest Department for Transport statistics show that driver distraction was a contributing factor in 29 per cent of all road deaths in 2022 — up from 23 per cent in 2013.
