All looks very nice SC, but I'm still having the tarts above all else
Made your own pastry? They're about the only thing which can compell me to make proper flakey from scratch.
I suppose a Beef Wellington might, but Mrs D is veggie.

Mille feuille pastry was straight out of a packet as life is too short to make puff pastry. I did a one day patisserie course where we made the tarts with the sugar work. The pavlova was a Mary Berry recipe.
I must admit I do find cooking cathartic except celebration cakes as I away find I’m up against the clock, so I won’t do them anymore.

I meant the Custard ones, I can say the proper name but I can't spell it
I've done them in my Pizza oven before and it's great for the same reason it makes great Pizza. Naffing hot!

Choc a beetroot works too.
Using mashed spud to replace some of the flour in sponge cake is also quite good!

I've just done a TON of prep today! Got the veg and beansprout filling for the spring rolls and the meaty bits done. Ran out of time to actually make and fry them, so that will have to be Monday now!

In Wales at the moment staying in a posh Airbnb (I didn't know it was this nice when I booked it so feeing blessed). I spent the afternoon with Caroline and Nick Sanders. Caroline gave me a giant courgette, an onion, a bunch of fresh herbs from her garden and some of the neighbour's Welsh Black Pig back bacon which I cooked on the posh induction hob back at the converted chapel. Delish.

Too late now I suspect, but I did squish it a lot in a muslin square (wrapped it up and twisted the muslin) to get rid of a fair bit of the liquid first

I’m determined to sort out baking in my mini air fryer! (Well, just until the oven is sorted!!)
All the recipes seem to only account for a full sized one so most of my attempts have not turned out too well :roll)
I found some weird shaped silicone cake things, cupcake sized. With the gap in the middle I figured that the cakes might actually cook through!! (I normally avoid silicone baking stuff cos I’ve never succeeded in making things works proper in them
But. These turned out ok. A sort of banana muffin mix, mini air fryer - now got cakes to share tomorrow!!
Then I chopped up loads of veg, a bit of chicken and used the last of a catering pot of korma curry paste!
I forgot that the weird shaped peppers are hotter than peppers! And the paste is way hotter than any korma I’ve had! So chucked in some coconut stuff and, well, it’s still a bit hot for me, but I’ll freeze it anyway and try and remember to add yoghurt when I reheat it
