France is very meat and cheese based! Gluten free is difficult over here. I'm sure there are French coeliacs but in the area I'm in, its rare to find a restaurant that understands and can be sure they are giving you food that won't make you ill. You can buy Gluten free in most supermarkets, but I think you'd have to research a bit to find places to eat out.
We are in the back of beyond TBF - so it may well be different in other areas
No idea of Italy or Croatia - good chance that the Italians have got a decent number of places doing gluten free so that people can actually eat their pasta?
Try DeepL for translations - it is generally a bit better than Google! It doesn't do translating writing yet, but for chat in a resto, it will be better!
