Mark Forsyth, it's a modern(ish) picture setup by Performance Bikes, iirc.

€7200 for the 500... the CB500X is £6699 right now.

Never heard of Windhoff but I think this is rather nice. (Several pics).

It’s all in the details with the incredible “Highland Scramblers” - a pair of Custom Interceptor 650s designed in collaboration with our official Experiential Partner @bikerbnb @the_highland_scramble
These machines were crafted with one clear goal in mind: to create the ultimate motorcycles for adventures through some of the most awe inspiring scenery and along some of the finest riding roads you could wish to experience.
Built in-house at the Royal Enfield UK Technical Centre - with some additional hand-crafted expertise from the amazing team at Harris Performance - these special collaboration builds demonstrate just how perfect a base canvas the 650 Twins prove to be your perfect custom build.

I reckon they look alright. I imagine it won't be long before they start selling a kit or readymade versions.

You don’t need special experimental motorbikes to ride around in Scotland.

I think they're a good looking style of bike.
In a similar vein, there were some nice looking Kawasaki 650/800 twins over at the Classic TT week the other month
