As well as the mahoosive courgettes from today, I still have one in the fridge from the last bag of 'goodies'!!!
It would be so much better if I actually liked courgette!! LOL
You could try frying them over a fairly hot flame with butter and sliced garlic, keep them moving gently (otherwise you'll have mush) until the garlic starts to lightly brown and serve - my favorite way of eating them.
Spiralise them and use in place of spaghetti, got to lightly fry them in oil, too much and it'll be mush again
